This beverage is a classic Japanese tea known as dokudami cha, which translates to 'houttuynia cordata tea.' While it may not enjoy the same popularity as green tea or hojicha, it boasts numerous health advantages.
Crafted solely from dokudami and presented in individual tea bags, this tea undergoes a roasting method that diminishes its characteristic odor and bitterness.
Furthermore, being caffeine-free, it serves as an excellent option for a soothing drink before bedtime
To prepare tea in a teapot, simply place one teabag into the pot filled with hot water. Allow the tea to steep for 30 to 60 seconds during the initial infusion. Adjust the steeping time to your preference for subsequent rounds.
For a more concentrated brew, opt for decoction. Place one teabag in a pot filled with approximately 1 liter of boiling water. Simmer over low heat for 5 minutes, or longer for a stronger infusion.
For chilled tea, use two teabags per pot and add 500ml of cold water. Let the mixture steep overnight in the refrigerator for a refreshing cold brew
